A true appreciation for the varietals will be gained by actually tasting the range of varietals produced in the current AVA's (Happy Canyon, Santa Maria, Sta. Rita Hills & Santa Ynez). Each AVA is unique in soil composition and microclimate, thereby producing uniqueness in its fruit.
