Chef Ravinder Singh Panwar, celebrated Chef De Cuisine at Bidri, has introduced the city to the cuisines from the Kitchens of ruling dynasties of India. Taking influence from Persian and Afghani Cooking, other restaurants and hotels in Hyderabad cannot compare to the dining experience at Bidri.
He adds to the menu traditional preparations such as Neer Nalli Kodi from Andhra, Chaunk Ki Dal from Lucknow, Deccani Saag from Hyderabad and traditional Sikandari Raan from the Kashmiri kitchens. The menu also includes rare dessert classics such as Kheer, Malai Kufi, Qubani ka Meetha and Sheer Kurma; giving the guest a true blue experience of Cuisine of the Riyasats.
