In celebration of the New Year, One Degree shares some of its favorite healthful recipes that will support a diet based on responsible and traceable food sourcing.

Sprouted Spelt Banana Bread
1 3/4 cups One Degree Sprouted Spelt Flour
1/2 cup coconut palm sugar
1/2 teaspoon salt
1 teaspoon double-acting baking powder
1/4 cup coconut oil, melted
1/2 cup almond milk
2 large bananas, mashed (approximately 1 cup)
1 teaspoon vanilla
1/2 cup chopped walnuts

Preheat oven to 350°. Lightly grease a loaf pan and set aside. Whisk together flour, coconut palm sugar, salt and baking powder.

In a separate bowl, whisk together coconut oil, mashed bananas, vanilla and almond milk. Gently stir together the dry and wet mixtures. Fold in the chopped walnuts.

Bake for 30-45 minutes.

Maple Almond Granola
7 cups One Degree Quick Oats
1 cup almonds, whole or sliced
1/2 cup pecans (optional)
1 cup coconut shreds
1 teaspoon salt
1/2 cup maple syrup
1/3 cup olive oil
1/2 cup warm water
1 1/2 teaspoons vanilla
1/2 teaspoon almond flavoring
1/2 cup One Degree Sunflower Seeds (optional)

Preheat oven to 225° and line two baking sheets with parchment paper. Mix dry ingredients together in a bowl. In a separate bowl, combine all wet ingredients. Mix two together. Spread granola out evenly on two baking sheets. Bake until granola is dry and slightly browned -- approximately 1 hour.

Sprouted Spelt Chocolate Chip Cookies
1 1/3 cups One Degree Sprouted Spelt Flour
1/4 cup coconut palm sugar
1/2 teaspoon double-acting baking powder
1/4 teaspoon salt
1/3 cup maple syrup plus 2 tablespoons
1 1/2 teaspoons vanilla
1/4 cup coconut oil plus 3 tablespoons
1/2 cup vegan chocolate chips

Preheat oven to 350°. Line two cookie sheets with parchment paper. In a medium bowl stir together all dry ingredients. In a separate bowl combine the wet ingredients. Mix two together by hand until combined. Fold in chocolate chips. Drop dough by spoonful onto prepared cookie sheets. Flatten slightly. Bake for 10-15 minutes until slightly golden. Store in an airtight container. Makes 10-12 cookies, depending on size.
