Baltimore Marriott Waterfront Executive Chef Carlos Gomez Offers Kitchen Secrets

As part of Marriott's Convention & Resort Network, however, the Baltimore Marriott Waterfront was able to convince its executive chef Carlos Gomez to reveal the recipe behind one of his favorite dishes for the network's newsletter. For the network's newsletter, Gomez shared a recipe from his Baltimore waterfront restaurant. The dish, pan-seared grouper with creamy polenta and crispy chickpea arugula, reflects both a modern American slant and Gomez's French Caribbean expertise. Incorporating fresh seafood, cornmeal and kicks of lime and chili powder, the dish offers a delicious and healthy option for family meals or special occasions. 

Before bringing his talent to this downtown Baltimore hotel in 2011, Gomez, a Puerto Rico native, studied at the Culinary Institute of America, Greystone in St. Helena, and spent time in kitchens across Europe. His passion for cooking took him outside the kitchen, winning him several medals at the New York Food Show and competitions in Europe and the Caribbean; honors at several Jack Daniels BBQ competitions and recognition with Marriott's highest award, the Bill Tiefel, which he won twice.

At the Baltimore Marriott Waterfront, Gomez oversees a team of 73, all of whom have words of praise for their executive chef. Gomez has come a long way since his first restaurant job at 15, when he was exposed to high-end food at a French restaurant and "felt an instant connection with the kitchen." Today, he lives by two phrases: "Live to eat" and "Life is cooking."
