Sourced from the Ferrari dairy in the village of Bedonia in the beautiful Taro Valley, located just west of Parma, Italy, it is produced within the strictly enforced area of origin for PDO Parmigiano Reggiano.
Organic Parmigiano Reggiano follows the same guidelines set forth by the Consorzio di Parmigiano Reggiano for all producers, but goes beyond these standards in the certified organic feed of their cows which is produced entirely on the Ferrari farm.
Recipient of the 2015 International Cheese Award at Nantwich, Ferrari's cows are raised in high altitudes where they graze freely on wild seasonal grasses lending delicious aroma and flavor to the milk.
The individual transparent blisters the cheese comes in are packed in Italy for a complete guarantee of certified origin as Parmigiano Reggiano PDO and USDA certified organic. This hermetic presentation gives a great image to the demanding organic focused customer that wants to be sure there is no cross-contamination with other conventional cheese.

About Parmigiano Reggiano
For more than 900 years Parmigiano Reggiano has been produced exclusively in the Italian provinces of Parma, Reggio Emilia, Modena and parts of the provinces of Mantua and Bologna, on the plains, hills and mountains enclosed between the rivers Po and Reno. From these deep roots in a protected and respected environment, come the unique qualities, which characterize the "king of cheeses". Parmigiano Reggiano is always made with just three ingredients: cow's milk, sea salt and rennet. The feeding of cattle complies with the norms of a strict specification that bans the use of silage and fermented feeds. Parmigiano Reggiano is aged a minimum of 12 months while most Parmigiano Reggiano available in the US is aged a minimum of 24-36 months.
